Favorite New Quiche

Quiche
I made this quiche yesterday and it was soooo good I must share! 

I started with a homemade pie crust that I made the night before. 
1 cup all-purpose flour
1/3 cup butter - chilled not room temp
1/2 tsp salt
1/4 cup cold water

The key to a good crust is a cold crust. 

I chopped the butter in little cubes and put it in a bowl. Then added flour and salt. I used my pastry cutter to cut in the butter until it "looks like peas" as Betty crocker puts it:0) then add the water a bit at a time using a fork to mix it in. Make a ball of dough and dump it on the cutting board you dusted with floor and roll it out. Fold it up in half and half again and place it in the pan. I use my fingers to flute the edges. 

Now for the filling..

1/2 pound of chopped frozen spinach, defrosted, and drained
2 sliced of cooked bacon chopped
8 eggs
1 and 1/2 cups milk
1/2 cup shredded cheese
6 asparagus spears, halved

Mix all the ingredients except the cheese and the asparagus together in a bowl. Then pour into your pie crust. Place the asparagus in a pretty star pattern and sprinkle cheese on top.  
Bake at 400 degrees for 45 minutes and let cool for 5 before serving.  

It's very good with my salsa on it. I'm just saying!

    The butter in the crust.. Bahahaha
