Make a single pie crust or buy one.
Heat oven to 425 degrees.
In a blender combine:
1/2 cup Half and Half
1 cup milk
Slice yellow and orange tomatoes really thin. Slice up some mozzarella really thin. Take about 6-8 small leaves of basil and cut into ribbons.
Pour egg mixture into pie crust. Sprinkle basil ribbons evenly. Then carefully layer a slice of tomato and a slice of cheese. Allowing about one slice of each per slice of quiche.
Sprinkle with a bit of salt and pepper. I put a sprig of basil in the middle cuz it looks nice..
Bake 40 min. Shake to make sure its cooked all the way through. It won't wiggle like its raw when its done.
Using the blender makes the finished product like a custard. It's amazing!!!! Let it sit about 5 minutes and serve:0) I added sour cream and salsa to mine.
