Make a single pie crust or buy one.
Heat oven to 425 degrees.
In a blender combine:
7 eggs
1/2 cup Half and Half
1 cup milk

Slice yellow and orange tomatoes really thin. Slice up some mozzarella really thin. Take about 6-8 small leaves of basil and cut into ribbons.

Pour egg mixture into pie crust. Sprinkle basil ribbons evenly. Then carefully layer a slice of tomato and a slice of cheese. Allowing about one slice of each per slice of quiche.
Sprinkle with a bit of salt and pepper. I put a sprig of basil in the middle cuz it looks nice..
Bake 40 min. Shake to make sure its cooked all the way through. It won't wiggle like its raw when its done.
Using the blender makes the finished product like a custard. It's amazing!!!! Let it sit about 5 minutes and serve:0) I added sour cream and salsa to mine.
Enjoy!Estherhttp://www.blogger.com/profile/09691370073668147342noreply@blogger.com1tag:blogger.com,1999:blog-6044367301501781089.post-40349496903260085692010-08-17T13:25:00.000-07:002010-08-17T13:25:30.400-07:00Favorite New Quiche
Quiche

I made this quiche yesterday and it was soooo good I must share!

If you do you can get all that bitter water out of it and it tastes sweet and almost nutty. It's amaaaazing.. Okay here's how you do it..

Chop the zucchini's in half, and then into sticks. They look like triangle blocks if that makes sense. Put them in a ziplock bag with some olive oil, garlic powder, dried parsley and salt. Let them sit for at least 20 minutes. Grill for a few minutes on each side until they are soft all the way through. Omg.. It's like fried zucchini only without the calories.

You can add bell peppers and yellow squash to this marinade and it works wonderfully!

I only take him like, 2 afternoons a week just so I can get some writing done and some Visalus stuff. I can do hair with a babysitter at home ok, but writing.. focusing? Ugh!! So anyway I thought it would be good for little guy to get some social interaction and some time on his own and sure enough it's awesome!
I've known Linda for about 10 years and she has watched many of my friend's kids. She has also watched my nephew - Aiden. And she's always done a great job.. She does games, she makes adorable little lunches.. The kids have a play house out back and a swing set. And her house is absolutely spotless!! She will even help with potty training and pacifier habit-breaking. She's like a mom away from mom:0)

If you need part time or full time day care for your little ones you should give her a call. She needs some new kids:0) I can't recommend her enough!!

Her number is 408-270-5297
Estherhttp://www.blogger.com/profile/09691370073668147342noreply@blogger.com1tag:blogger.com,1999:blog-6044367301501781089.post-72720365210745808332010-08-12T14:36:00.000-07:002010-08-12T14:36:10.474-07:00Epic FailOk so today Dr became officially too big to sit on my bed without falling off. Guess how I know? Yeah, he fell.. He fell onto carpet. He was scared but otherwise un-hurt which is wonderful. What would be even more wonderful is if he didn't fall at all. He's not crawling yet or even scooting but he's strong. I was 3 feet away and literally took my eyes off him for like 1 minute. If that. Everyone I talked to said it happens to everyone. Which is comforting but with my perfectionist tendencies I'd like to have been the mom that never happened to.
Too late!!! Oh well. I've learned my lesson. He's keeping his bottom on the floor, surrounded by blankets for the rest of his life. Wait, is that too extreme??
Yes, I told Dave and no, he didn't yell at me. We just decided to try to avoid this kind of drama (i.e. Injuring the baby) as best we can from now on.Estherhttp://www.blogger.com/profile/09691370073668147342noreply@blogger.com1tag:blogger.com,1999:blog-6044367301501781089.post-72363915833066685142010-08-05T16:45:00.000-07:002010-08-05T16:45:40.923-07:00Cilantro Lime Chicken TacosHey Everybody! Okay here's my first attempt at a blog.. These were super yummy so I'll post the recipe:0)

In a ziplock bag:
Two chicken breasts, butterflied
About a 1/4 cup chopped cilantro
1 tsp Ginger powder
1 tsp salt
1 tsp pepper
Juice of 1 whole lime
1/4 cup olive oil

On the side:
Corn tortillas
Cheese
Whatever salsa you got on hand
Extra cilantro
Sour cream..

Okay first I set the chicken to marinate. I let it sit for about 20 min. This gives me time to make my side dishes..
Then I grill up the chicken on super hot heat for a couple minutes on each side. It cooks really fast when you've got it so thin. When it's done I chop it up and set it aside.
Toast the tortillas in the oven with some cheese on them. I use the High setting of my broiler and put them on a cookie sheet. It takes about 2 minutes or so for the cheese to melt and the tortillas to be toasty. Then build yourself a yummy taco!! Sooooo good!!!Estherhttp://www.blogger.com/profile/09691370073668147342noreply@blogger.com4
